Pansy’s were often kids who were too chicken to do something they were dared too, and then I realised they were first flowers. And the really cute kind that make an appearance in Disney’s depiction of Alice in Wonderland, smiling and swaying in chorus. And then I learned you can EAT THEM!!
Pansy’s are edible! Crazy right?! These cute little buttons of color, just pop one in your mouth and chomp away. Now I’ll be honest they taste kind of like lettuce or any other leafy green, an earthy slightly spicy flavor. We wondered about how to pair these cute edibles with a cocktail and with a little inspiration from Cassie Winlow’s book, Floral Libations, we decided to follow her lead and make a margarita.
My go-to recipe for a margarita is silver tequila, fresh squeezed lime and Cointreau. For this floral version we decided to use a mix of citrus flavors with freshly squeezed, lime, lemon and orange juice. We add some sweetness with the orange chamomile simple syrup. We added chamomile ice cubes and added the pansy as our garnish, make sure you finish your drink with a fresh floral chomp!

INGREDIENTS
3 oz Tequila
1 oz Lemon Juice
1 oz Lime Juice
1 oz Orange Juice
1/2 oz Orange and Chamomile Simple Syrup
Salt for the rim
Cubed Ice
Chamomile Ice Cubes
Pansies for garnish
INSTRUCTIONS
PREPARE ICE CUBES:
1. Create chamomile ice cubes by half-filling an ice cube tray with water.
2. Place in the freezer until semi-frozen.
3. Remove the ice tray from the freezer and place a flower or 2 on the ½ filled cubes.
4. Fill with water and return to the freezer.
MAKE COCKTAIL
1. Rim your rocks glass with salt.
2. Place chamomile ice cubes into the glass.
3. Add Tequila, Lemon Juice, Lime Juice, Orange Juice, Orange Chamomile simple syrup and ice to mixing glass.
4. Mix with a stirring spoon until mixing glass is chilled.
5. Strain into prepared rocks glass.
6. Garnish with pansies.
